FRESH SHIMEJI [Scientific name: Hypsizygus marmoreus]

Shimeji mushrooms, also known as beech mushrooms, are a popular edible mushroom variety. They are small to medium-sized mushrooms with a unique appearance and a delicate texture. 

These mushrooms have a mildly nutty and slightly sweet flavour, making them versatile in various culinary applications. Shimeji mushrooms have a firm and crunchy texture when raw, but they become tender and develop a pleasant umami flavour when cooked.


Culinary use: Best with ramen, rice bowls, risotto, pizza. They are often used in stir-fries, soups, stews, sautés, and mushroom-based sauces. 

 Suggested use: Stir fry, soups and stews.

Stir fry:

  • Sauté with olive oil over medium heat and season with butter, garlic, soy sauce, and rice vinegar. 
  • Finish off with some scallions or green onions, and season with salt and black pepper.


Health benefits: They are rich in antioxidants, protein, potassium, and fiber. Some studies show that it can prevent parasitic infections and the proliferation of various cancer cells. In addition, it has anti-inflammatory, anti-bacterial, and antifungal properties.
